The ‘Famous’ Farmhouse Veggie Burger by The Farm Cafe
One of my ultimate food weaknesses (I’m sure like many others) and something I cannot pass up is a good burger, complete it with chilli fries and a large glass of lemon soda and it becomes the perfect meal. Saying that, a good burger is hard to come by, what I look for is that it’s not too dry, brown but not burnt and it has to be seasoned well.
I came across this aubergine based burger, it’s the thought process of one talented chef at The Farm Café in Portland, USA and it has some big fans including Chef Duff of ‘Ace of Cakes’, now if you watch this programme you will know how this guy loves his meat so when he mentioned this was the best, yep the best burger he had ever had and it was vegetarian, I had to give it a try. This is an incredible burger, with the moist almost creamy Aubergine texture, the peppery parsley and the crispy breadcrumbs, it has a perfect blend of earthy ingredients, which you wouldn’t expect but it has a kick to it from the parsley. Because we vegans forgo the cheese, I add a little cream cheese to bind the ingredients together but I have heard so much great stuff about it that next time I will use some Vegusto cheese. (Can’t wait to try that!)
I made an avocado and vegan mayo mix with a mustard and chilli sauce as an additional filling, and topped off with the caramalised onions, Portobello mushrooms and whole roasted peppers, it was good!, don’t forget the chilli fries and you will have a feast to remember!
Mustard Burger Sauce
1/2 cup Dijon mustard
2 tablespoons hot sauce
1 tablespoon chopped dill pickle
salt and pepper to taste
1 teaspoon fresh lemon juice
Mix together and spread over the burger/bun. Enjoy!

Let me know how you find it! I personally prefer it to the norm of veggie burgers, the cooked aubergine definitely makes it what it is.
